Sammy’s Macadamia Pina-Jito
INGREDIENTS:
1 oz. Sammy’s Beach Bar Rum
1 oz. Sammy’s Red Head Macadamia as float
3 oz. Creme of Coconut
4 Pineapple chunks
4 Mint leaves
½ oz. Lime juice
Club soda or sparkling water
Dash of bitters
Toasted Coconut flakes for garnish
Pineapple wedge & cherry for garnish
INSTRUCTIONS:
Muddle mint in the bottom of highball and add lime juice. Add Creme of Coconut, pineapple chunks, Sammy’s White Rum, and ice to a blender. Blend until purèed. Fill highball with purèe, then top with club soda and float the Red Head Rum with a dash of bitters. Garnish with toasted coconut flakes, pineapple, and cherry.
